Lemon Shortbread Cookies
Melt in your mouth lemon shortbread cookies. These cookies are made with fresh lemon zest and juice which give a bold fresh lemon flavor.

Preheat oven to 160°C / 320°F.
Line a baking tray with baking paper or a silicone mat and set aside.
Cream butter and sugar together until light and creamy.
Add in lemon zest and lemon juices and continue to beat for another 30 seconds.
Next add in flour and cornstarch and mix on low speed (or by hand) until mix comes together into a ball.
Add a little flour to your bench and roll out cookie dough to 5mm thick. Then using a cookie cutter cut out cookies and place on a lined baking tray.
Bake for 15-20 at 160°c / 320°f.
Let sit for a minute then move to a cooling rack.
Leave plain or drizzled with melted chocolate or a lemon glaze.
